Paul Bailey's mind when the opportunity to open a fourth restaurant presented itself. A departure from the
other three, which are more of the barbeque sports bar variety, The Dining Room in Blauvelt was lovingly
designed both front and back of house to be a home away from home where you can get a great meal
and enjoy the elevated casual vibe, all without having to travel far. From the food to the staff to the décor,
care and craftsmanship has gone into every detail. "You have to put love into it or else what are we doing?"
says Bailey who personally designed the interior and made sure to tap local talent like the Haitian artist
whose paintings adorn the dining room's walls and the Irish master carpenter who brought the bar vision to
life. With a color palette of creamy brown leather, hues of deep blue and the classic city bistro black and
white tile that surrounds the bar, the dining room sets the scene for the food and drinks that are to come.
