Grilled Peaches with Honey Yogurt and Mint Ingredients serving 4 4 Peaches halved and pitted (slightly firm) 2 tablespoons extra-virgin olive oil 2 cups thick Greek yogurt (may substitute for almond or coconut yogurt for vegan recipe) 1/4 cup honey (may substitute for balsamic reduction for vegan recipe) 1/2 cup torn fresh mint leaves Instructions Preheat the grill on the highest setting. Brush the peaches with the olive oil, and place on the grill, flesh-side down. Grill for 1 to 2 minutes without moving. Transfer the peaches to a platter and top each half with a large tablespoon of yogurt, drizzle with honey (balsamic re- duction optional) and top with torn mint (may serve with granola for brunch). Balsamic Reduction (Glaze) 1 cup balsamic vinegar Instructions Add the vinegar to a small saucepan and bring to a gentle boil. Reduce the heat and simmer, stirring often, until thick and reduced, about 8 to 12 minutes. Peaches & Mint Granita 4 large ripe peaches, peeled, pitted, and chopped ½ cup water Pinch of salt 3 tablespoons of honey (adjust based on peach sweetness) 10 fresh mint leaves (plus extra for garnish) 2 tablespoons lemon juice (about ½ a lemon) Instructions Blend - Place the chopped peaches, mint leaves, honey, water, lemon juice, (alcohol optional) and a pinch of salt into a blender. Blend until completely smooth. Freeze - Pour the peach-mint purée into a shallow, freezer-safe glass or metal dish. Place it in freezer. Scrape - Every 30 minutes, remove the dish and use a fork to scrape and stir the mixture, breaking up the ice crys- tals. Repeat this process for 3-4 hours until the whole mixture resembles a fluffy shaved ice. Serve - Scrape once more before serv- ing and scoop into chilled bowls or cocktail glasses.
