bartender in Hanoi dates
back to the 1940s. Egg
coffee, or cà phê tr ng,
is strong coffee com-
bined with sweetened
condensed milk and
beaten egg yolks. The
cup is then served in a
shallow dish of hot
water to keep it warm.
Though it sounds
strange, it's like drinking
an ethereal mousse.
